2 whole chickens, 1 kilo chopped onions, pickled olives, for
garnish
Ingredients (for marinade chicken)
3 crushed garlic cloves 1 large coriander bundle 2 tablespoons ginger
powder 1 tablespoon black pepper 2 tablespoons turmeric Pinch of saffron 1
cup olive oil 1 chicken broth cube 2 tablespoons ghee to taste 1/4 kilo
salt, minced chicken liver, garlic, crushed cloves 1 teaspoon powder
Ginger 1 teaspoon black pepper to a pinch of salt Small handful of
coriander Olive oil and vegetable oil Vegetable oil for frying
How to prepare:
Wash the chicken well and make slits in the chest and thighs of the
chicken.
In a food processor, put all the dressing ingredients and mix well.
Put the marinade in the
slits of the chicken, season it well from the inside, and leave it for at
least two hours, preferably overnight, in the refrigerator until the
marinade is absorbed.
Bring a large saucepan and put it on a medium heat and put oil in it and
leave it until it heats up and put the onions, garlic, spices and parsley
and stir them.
Put the chicken in the marinade and add a cup of water or more until the
water covers the chicken. Cover the pot and reduce the heat a little, then
leave for 40 minutes or until the chicken is completely cooked. Remove the
chicken from the pot and put it on a side dish, then raise the heat to the
pot again and stir until the water dries up and the onion color changes
and turns into a brown sauce, then turn off the heat.
Bring a frying pan and put it on a high heat, then put the oil in it and
leave it until it heats up, then put the chicken and fry it from all
sides.
Put the roasted chicken in a serving dish, then put the onions that have
become dull, garnish with lemon and pickled olives, and serve with boiled
eggs hot for health and wellness.
