Paella
The origin of this dish is somewhat strange, because it was a
coincidence, as it was formed from leftovers, and this dish moved from
this stage to being the most famous international food in Spain. This dish
is of Spanish origin, specifically in the Spanish city of Valencia, there is a belief that says that the word paella is derived from the word
leftover in the Arabic language.
There is another narration that says that the name of this dish dates
back to the period of the rule of the kings of Andalusia, where when the
kings finished eating, the rest of the food was collected from fish, meat,
vegetables and rice.

Ingredients:
Two cups of rice Four
pieces of fish fillets, cut into medium cubes 1 kg of peeled shrimp Half a
kilo of seashells, chopped medium Onion Five cloves of garlic A tablespoon
of paella spices A teaspoon of saffron Six tablespoons of vegetable oil 1
cup of peas Two cups of tomatoes Lemon peel Three and a half cups of water
and a tablespoon of salt
How to prepare :
Heat the olive oil and vegetable oil in a saucepan over the fire, then
add the chopped onion and saute it with garlic until it changes color and
becomes golden, then add the fillet fish pieces to the onions and garlic
and stir the ingredients together until the juices come out of the
fish.
Then add the shrimp and frozen peas to the previous mixture and stir
them, then sprinkle the saffron or turmeric and paella spices over the
mixture, then pour the water over it and leave it to boil. Wash the rice
well and filter it, add the rice and leave it to cook over a medium heat
when the previous mixture boils without covering the pot until the amount
of water decreases.
Then stir the rice with a fork and cover it while reducing the fire under
it. Grill the shrimp in a hot oven while preparing the rice for fifteen
minutes, then cook the shellfish in another pot over a strong heat, then
add the peeled tomatoes with one clove of garlic and sprinkle a teaspoon
of paella spices over it.
Then add lemon zest over the shell mixture and leave it for fifteen
minutes, then pour the rice after its maturity in a wide serving dish and
distribute the grilled shrimp over it in an appropriate manner with the
seashells next to the shrimp alternately on the surface of the rice, then
pour the tomato sauce in a separate small dish and serve it next to the
hot paella .
